/></p><p>< 鱼饼来源 ></p><p> </p><p>鱼饼本源于江浙,福清鱼饼则演绎出了独属福清的味道。传说古时候,福清高山的渔民辛苦捕鱼却因渔霸欺凌压榨,捕鱼成果所剩无几。村里一对渔民夫妇的母亲患重病,需食海鳗滋补身体,却苦于渔霸的搜查无法将鱼带回家中。</p><p> </p><p>于是,渔民夫妇将大鳗鱼斩头去尾,切块剁碎,隐藏在装虾米的筐底躲过了渔霸的搜查。为防煮时鱼味飘出引人怀疑,夫妇俩将鱼肉剁成鱼糜,再加入盐,并与番薯粉揉合搅拌,制成没有腥气的鱼丸。老人吃了后,渐渐恢复了健康,这便是福清鱼饼的起源。后人则在鱼肉浆加上面粉,与荸荠丁揉成丸,放入油锅里炸成鱼饼,成为一道特色菜肴。</p><p class="qf_image big noneditable" /></p><p>关于福清鱼饼的来历,还有另一传说:旧时有一户富裕人家宴客,厨师前一天就预先打制鱼丸。福清鱼丸是在浆料搅拌好后,再捏成丸放入清水中待煮,如果鱼丸浆打制合宜则鱼丸坯会浮在水面,如不合宜则会沉入水底。而沉入的肉丸咬劲不够,口感差。那天厨师因为家中有故,没有心绪打制鱼丸浆,打出的鱼丸沉入了水底。厨师急中生智,在浆中加入全蛋液和面粉,试着进行油炸,不料炸出的鱼饼风味别致,大受食客喜爱。于是,鱼饼的做法便流传开来,成为福清宴席上的一道特色菜品。</p><p </p><p>原来,福清鱼饼本为丸状,但因为冷却后的鱼饼由于热气流失,形状也随之瘪下去,变成饼状。在制作过程中,鱼饼外形乃至原料、制作工艺几乎跟鱼丸没有什么两样,但细说,却又有很大的不同了。</p><p> </p><p>鱼丸是用鱼肉掺地瓜粉搅拌成白色糊状,包上肉馅成丸水煮,通常用于汤肴美食,鲜热果腹;而鱼饼则是用鱼肉掺合面粉再加姜末、葱花、荸荠丁、鸭蛋及食盐、味精,讲究的再添些蟹黄搅拌成五彩糊状包上肉馅成丸温火油炸,常作为炸物小吃。</p><p class="qf_image big noneditable" contenteditable="false"><img /></p><p>01</p><p>制作鱼浆、馅料</p><p>将鲜鱼(鳗,鲨为佳)去骨剁绞成泥,加入清水、精盐、鸡蛋清和适量的味精。倒入盘内猛搅15分钟左右,搅到鱼羹能浮在水面,加入干淀粉用力再搅成粘糊。朝着一个方向一直打粘稠,变成胶状,加少量生粉进去,然后加入萝卜丁。将猪肉剁碎成肉末,加入葱花,酱油,盐巴,味精等调料腌制一会,搓成小肉丸备用。</p><p class="qf_image big /></p><p>02</p><p>搓丸下锅</p><p>倒入适量的油,加热至起小气泡为止。油温不可太高,五成热足矣。左手取适量鱼浆,在掌心上摊开,右手拿小圆勺取馅料放在鱼浆中间,左手五指合拢将馅包在中间,再把鱼羹从大拇指和食指握成的圆洞中挤出,然后将包好的鱼饼下油锅炸。</p><p class="qf_image big noneditable"
