2em;">福清光饼与戚继光率军来融抗倭、扫清倭患相关，这大概没有太多的争议。</p><p style="text-align: center;margin-top: 16px;margin-bottom: 16px;"></p><p style="text-indent: 2em;">戚继光卫籍山东登州（今山东蓬莱），在当地早有类似的烤制饼子，叫作烧饼。话说嘉靖四十一年（1562）农历八月廿九，戚家军首次入融，当天午夜马不停蹄，“人负草一束”，“以草填泥而进”，冒着暴雨发动“牛田战役”。兵马未动粮草先行。戚家军伙夫本来照例备了些烧饼作为行军干粮，这一回却遇到了难题，一些将士水土不服，加上步履匆匆，出现或拉稀或便结症状，影响整体战斗力。戚家军纪律严明、秋毫无犯，没有向福清当地官衙士民伸手要钱要物。为了解决部队遇到的问题，戚继光便让伙夫向当地民众请教，于是在烤制山东烧饼的基础上，加上适量的食用碱、福清地产食盐，解除将士拉稀和长途行军盐分透支、浑身无力现象；饼面撒上些许芝麻，增加香味提升口感；光饼中间打孔，系绳成串，便于行军携带。戚家军第二次入融，是在第二年农历四月，正缝多雨季节，技术改造后的“烧饼”正好派上用场。</p><section 2em;">鼠曲粿早在唐代就有，晚唐诗人皮日休有诗云：“深挑乍见牛唇液，细掐徐闻鼠耳（“鼠曲草”的别称）香”。福清清明节制作和食用鼠曲粿的习俗，应是晚唐五代时期，各姓氏先人从河南固始等中原老家带过来的。</p><p style="text-indent: 2em;">再往上追溯，鼠曲粿与纪念春秋时期的介子推、传播忠孝节义仁的寒食节有关。介子推割股救主、不受俸禄，被烧死前在衣襟上留下一首血诗，字里行间饱含着满满的家国情怀：</p><p style="text-indent: 2em;">割肉奉君尽丹心，但愿主公常清明。</p><p style="text-indent: 2em;">柳下作鬼终不见，强似伴君作谏臣。</p><p 2em;">在福清乡村，以往清明节来临之前，许多农户都忙着制作鼠曲粿，俗称清明粿。鼠曲粿的名称来自一种野菜——鼠曲草，俗称“清明菜”，别称“鼠耳草”。这种野菜长于冬季农田和荒埔，清明时节最为肥嫩。从田间采集后，选择芯叶煮熟捣烂，沥去涩水，与糯米粉揉成团块，制成面皮，包上或甜或咸的内馅，捏成不同形状，垫在蕉叶上蒸熟。</p><p style="text-indent: 2em;">鼠曲粿的内馅有多种，有糯米饭、菜头（白萝卜）丝、红豆泥，多数是番薯钱（地瓜片）煮熟捣成末。时下鼠曲粿已商品化，农村人家也少做。而且番薯钱馅的鼠曲粿几乎没有了，因为番薯钱比大米贵，做生意算成本，不划算。商家将鼠曲粿用木模具印成龟状，意为“鹤寿龟龄”。</p><p style="text-indent: 2em;">笋，有孝的故事在里面。据福清里美《俞氏宗谱》载，“俞运次子俞定则游商不归，相传寓于交趾（今越南）。尝闻定则公迁往他处，克成（实现）家业必壻大族巨室”。俞定则侨居海外多年，曾用笺（信纸）作诗四首并书，令一小王子回家省亲……其第四首题为《冬》，最后两句是“卧冰泣竹今难继，且让王祥与孟宗”。</p><p style="text-indent: 2em;">孟宗哭竹是中国二十四孝故事之一，说的是孟宗年幼时父亲离世，母亲多病，他不知如何是好，跑到竹林里抱着竹子哭诉。孟宗的孝心感动了天地，长出竹笋，竹笋治好了他母亲的病。</p><p style="text-indent: 2em;">红糟煮竹笋，象征子女与父母的血亲关系。</p><p style="text-indent:
